Bananas, Blueberries, Avocados…O My

Yes friends, my procrastination of my Marketing final has really inspired me and did stop at the Sweet Potato fries. As I said in my last post, Avocados are trendy! For real, they are! Go to Sunflower Market in Boulder,CO and you can get 3 for $1, ya buddy! Another thing that is super trendy and convenient is finding a Sous Chef. Meet my newly awesome Sous chef:

Ok so I was Stumbling with my roomie the other day and we came across this recipe on “Live Laugh Eat.”

I couldn’t pass it up so I made this instead of learning about consumer decisions for my BCOR class because I’m pretty sure consumers would enjoy this more than taking a Marketing final…right?

All of the ingredients… not too many = super easy and YUM!

Dry ingredients… mix them up!

Wet Ingredients… Blend them up!

Combine wet and dry ingredients (adding avocado sounds weird but you can’t taste it and it makes the whole thing soooo much better and moist…that word is weird)

Fold in Blueberries 

Use the rest of the blueberries to make a legit design

You’re friends will appreciate you FOREVER and will owe you so many favors!

And then you can recruit them to help you out! (See description below)

My Sous Chef Megan… the best person 

This is so yummy, so easy, and healthy! Yay for everyone who loves tasty treats and healthy things…like me! 

Here is the recipe which I got off of www.livelaugheat.com :

This bread-cake is chock full of wholesome ingredients, making it perfect for breakfast, dessert or even an afternoon snack. The whole grain flour, flax seeds, and fruit make it high in fiber while the avocado, yogurt and banana give it a dense cake-like texture.

Ingredients

  • 2 cups whole grain flour (I used 1/2 c each of oat flour, oat bran, spelt flour, and whole wheat pastry flour)
  • 1/4 cup ground flax seeds
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2 med-sized bananas
  • 2 TBSP avocado
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup stevia baking blend (or sugar/honey/agave nectar)
  • 1/2 cup plain nonfat yogurt
  • 1 cup blueberries

Directions

Preheat oven to 325* F. In a large bowl, combine dry ingredients. Set aside 1/2 a banana and mash into small chunks with a fork. Blend together wet ingredients using a food processor, blender, or a whisk (whisk it well!) and then mix in the banana chunks. Add the wet ingredients into the dry ingredients until just incorporated. Fold in 3/4 cup of blueberries. Pour batter into a loaf pan and top with remaining blueberries. Bake for 45 minutes or when inserted toothpick comes out clean.

Notes

This bread-cake is very moist and therefore should be baked at a lower temperature for a longer period of time to ensure even baking. Depending on your oven, you may have to bake it at 300* F. I would consider using an additional 1/2 cup of flour to slightly decrease the moisture of the bread. The stevia worked well in this recipe. I could taste the stevia (slightly different from sugar), but it wasn’t obvious.

Substitutions

  • oil or butter for avocado
  • whole wheat pastry flour or all-purpose flour for the whole grain flours above
  • sugar/agave/honey for stevia
  • a ‘flax egg’ for the egg

Avocados Are Trendy (Potatoes That Are Sweet As Well)

It is finals week…lame!! I should most definitely be studying for my Marketing final right now but procrastination sounds more fun at this moment. Facebook is cool and so is Twitter but I have already caught up with all of my Royal Wedding updates and such so what to do, what to do…? COOK! BAKE! SAMPLE YUMMY THINGS! My friends and I (Chelsea and Meg) just cooked so many things tonight and I am about to provide you with some EASY recipes that taste amazing! Here we go friends:

Sweet Potato Chips… Homemade and Cheap!!

Minimal ingredients…

Do you know how to cut up a potato? Well your in luck!

You can make your own chips:)

Smothered in yumminess 

Put it in a pan and bake…

Enjoy! Add your other favorite starch (mine happens to be Blue Moon) and you are set!

If this looks appetizing here is the recipe…Soooo EASY:

Ingredients:

1 Sweet Potato or Yam (either work)

1 TBSP of Olive Oil

Hot Sauce to taste (I used about 1 TBSP because I like things SPICY!)

A few dashes of Sea Salt

A dash or two of Garlic Salt

1.5 tsp of Chili Powder

Directions:

1. Preheat the oven to 400 degrees

2. Wash the sweet potato and then thinly slice (keep skin on)

3. Transfer the thinly sliced sweet potatoes into a large bowl and add Olive Oil, Hot Sauce, salt, garlic salt, and chili powder

4. Mix well in the bowl and be sure to coat all of the slices of potato 

5. Spread slices of seasoned potato evenly on a baking sheet and season with a little more sea salt and chili powder

6. Bake for about 10 min (check to see if they are browning or becoming crispy)

7. Flip and re-season on the other side with chili powder and a little salt (not too much though)

8. Once they are crispy and slightly browned, take out of the oven, place on another place and serve!!!

9. You might suffer from nonstop “yumming” because of how good these are

Chic Commoner Turns Royal

Ok so here is the deal:

If you weren’t at least a little bit excited about the Royal Wedding then you are not awesome (men included.) I personally have been awaiting this whole extravaganza since the moment William and Kate announced their engagement in November. The fact that my mom and her best friend Kitty were obsessed with this whole ordeal didn’t help…They decided to throw a viewing party and of course I couldn’t turn down an invitation to such a classy event (plus homemade scones and tea… yes please!) 

Here are the facts: 

1. I can see why my mom was devastated when Princess Diana died (my mom watched that wedding live also)

 (pretty lady)

2. Kate Middleton is too cool for words! A real life fairy tale comes to true! (Prince Harry look out)

 (college lovers, smile!)

3. Her dress was OBVIOUSLY phenomenal!

 

Chic, classy, awesome, I want that!

4. And her other dress…

  (I can’t decide which one is better)

5. The Royal Wedding is the coolest event EVER! Don’t be a negative…

6. Well…Maybe things got awkward…

7. ….But you can’t deny that it is history at its finest!

Transparent Nets To Catch Males…Pretty Accurate!

I found this video while on Stumble today. Not only is it pretty interesting, it is hilarious to see the fashion predictions from the 1930s. I also have to admit that some of the predictions are pretty on point. The outfit of “transparent nets to catch males” as well as the awesome shoes fashioned are very Gaga-esque if you ask me. What do you think people will be wearing in 80 years???
